Strawberry Cake
1 small box strawberry jello
1 white cake mix
4 eggs
1 cup oil
1/2 cup water
1/2 cup strawberries & juice (frozen with sugar, but thawed)
Mix dry jello with dry cake mix. Add next four ingredients. Beat well for three minutes.
Bake 30 minutes @ 350 oven. (9x13 cake pan)
Bake 22-25 minutes @350 oven. (3 cake layers)
Frosting
1 box powdered sugar (approximately 4 cups) with 1/4 cup butter.
1/2 cup strawberries & juice.
1 tsp vanilla
Mix ingredients and pour over cool cake.
This strawberry cake recipe came from my dear friend Linda Pollock. When I was a girl, Linda taught me Sunday School lessons in Duncan, Oklahoma, and then when I became a woman, she baked my wedding cakes. Not only is she a wonderful friend, but she also is a superb baker and ran a most successful catering business. Hats off to you, Linda!
